Why chiffon
It is not a sponge, and that is the point.
Most celebration cakes in Malta are traditional butter sponges wrapped in a thick shell of icing. Chiffon is built completely differently.
Instead of creamed butter, I fold whipped egg whites into a light oil batter, baking it in an ungreased tin so it can literally climb its way to the top. What comes out of my oven is tall, feather-light, and wonderfully springy, moist without feeling heavy, and sturdy enough to hold a rich filling. Most importantly, it’s not so sweet that you’re done after a few bites; it’s the kind of cake you actually want a second slice of.
Bringing this airy, uncommon bake to Malta is the reason I started my home kitchen, and every cake is baked with that exact passion.

My passion for baking started with a simple vision: to bring something remarkably light, delicate, and refined to local celebrations. That’s how I fell in love with chiffon, a cake known for its cloud-like lightness and airy texture.
Driven by quality and care, I craft every bake from scratch using premium ingredients, folding every meringue by hand to achieve the perfect balance of delicate texture and rich flavour. Beyond my signature tall chiffon cakes, I also make gourmet cupcakes, cookies, brownies, brookies, and cinnamon rolls. Because everything is handcrafted entirely by me in my home kitchen, I accept a limited number of orders each week to ensure every single treat receives the time, detail, and dedication it deserves.
